The making of an Enchilada

Enchiladas are one of the most popular Mexican foods around. Essentially a corn tortilla rolled around a filling or variety of fillings in a chili pepper sauce, it is one of the easiest Mexican dishes to make. In our latest blog post, we go into the process of making your own enchiladas at home.

Step1: Gather the ingredients

You will need oil, corn tortillas, enchilada sauce and fillings. Enchiladas can be filled with a variety of ingredients such as vegetables, meats, cheese, potatoes and beans.

Step2: Prepare the tortillas

Warm the oil (you don’t want it burning hot, just warm). Dip the corn tortillas into the warm oil for approximately 6 seconds. The tortillas should soften. Put the warm tortillas into a dish close by. After the tortillas have cooled down a bit, dip them into the enchilada sauce. You want the tortillas to be coated with the chili sauce.

There are a number of different recipes for the chili sauce. Here are the ingredients for a basic recipe that works well:

  • 3 tablespoons olive oil
  • 3 tablespoons flour (whole wheat flour, all-purpose flour and gluten-free flour blends all work!)
  • 1 tablespoon ground chili powder (scale back if you’re sensitive to spice or using particularly spicy chili powder)
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon salt, to taste
  • Pinch of cinnamon (optional but recommended)
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1 teaspoon apple cider vinegar or distilled white vinegar
  • Freshly ground black pepper, to taste

Step4: Add the fillings

Spread the coated tortilla into a dish and add your chosen fillings to the center of the enchiladas. Roll the tortilla like a pancake so that the fillings are in the center of the rolled enchiladas.

Step5: Bake

Place the rolled enchiladas next to each other in an oven dish or pan. Sprinkle cheese and the remaining enchilada sauce over the enchiladas. Bake the enchiladas in a 350 F oven for approximately 20 minutes.

Step5: Enjoy!
